I was inspired to create this salad several years after having a similar salad at one of Jamie Olivier’s restaurants. But I cannot recall if it was with pears or apples. And the cheese used at the restaurant was most likely shavings of parmesan.
My version was a big hit with my husband. And the preparation time was less with minimal ingredients, without compromising on taste. The dressing sweetened with honey helps to cut the sourness of the green apples.
I tried out apple cider vinegar for the first time which was much lighter and less acidic than regular white or grape vinegar. Give it a shot if you like to try out new salads.
Halloumi(around 6-7 peices of 1 in wide and 2 inch long each)
1 Tablespoon Olive oil
1 Green Apple
Mixed Green leaves as per your preference
Walnuts or Almonds as per your preference
For the dressing
Apple Cider Vinager 4 tablespoons
Black pepper to taste
Sea Salt to taste
1 tablespoon honey
Virgin Olive oil to taste
Preparation time: 15 minutes
You can grill the halloumi or simply fry the halloumi strips in 1 tablespoon olive(or any oil you regularly use) oil on medium heat till lightly golden on both sides. I find olive oil’s taste very strong for frying so I used sunflower oil.
Wash and dry your choice of salad leaves, I used mixed Italian greens. Make quarters of the green apples and make about 3 mm thick slices. It should be thin enough to bite easily but not too thin that it will break easily.
Whisk all the dressing ingredients together in a separate bowl. In a large bowl mix the washed greens and apples and pour in the dressing and toss. Transfer to serving plate and garnish with the grilled/fried haloumi strips and walnuts/almonds.
